Lemon and Garlic Baked Cod
INGREDIENTS
- 2 Cod fillers (roughly same size and shape)
- 1/2 cup olive oil
- 6 tbsp Ghee, melted
- 1 tsp coriander
- 1 tsp paprika
- 1/4 cup lemon zest from 2 lemons
- 6 fresh garlic cloves, thinly sliced
- 4 tbsp capers
Salt and Pepper to taste
RECIPE
- Heat oven to 400 degrees
- Spray a large oven safe dish with cooking spray.
- Lay fish in the dish.
- Melt Ghee and add it to the olive oil.
- Pour it over the fish.
- Sprinkle salt, pepper, coriander and paprika all over fish.
- Top fish with capers, garlic, and lemon zest.
- Bake fish for 15 to 20 minutes until flakes.
- Squeeze lemon on top of fish.
Make it colorful with parsley or cilantro.
