Chicken with Orzo and Broccoli


INGREDIENTS

- 1 cup of Orzo
- 1 lb chicken breast, cubed
- 3 tbsp olive oil,  divided
- 4 garlic cloves, minced
- 2 14.5 oz cans of stewed tomatoes 
- 1 15 oz can of cannellini beans, rinsed
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/4 tsp pepper
- 1 12 oz package of frozen broccoli,  thawed and chopped.

Recipe

1. Cook the Orzo pasta according to the package directions. 
2. Heat 2 tsp of olive oil in a high sided pan. Add the chicken.  Sprinkle 1/2 tsp and pepper on it and stir . Cook until all pieces are brown. Set aside.
3. In the same pan, add 1 tsp of oil and garlic. Cook on low heat for 1 minutes. Stir frequently so the garlic doesn't burn. 
4. Add the stewed tomatoes and crush them in the pan. 
5. Add the beans, Italian seasoning,  and 1/2 tsp. of salt
6. Bring the mixture back up to a slow boil. 
7. Add the broccoli and chicken back to the pan and heat throughout.  
8. Add the Orzo to the mixture and stir until combined.
