Baked Cod with Asparagus and Tomatoes


INGREDIENTS

- 4 pieces of Cod fish
- 1 pint of grape or cherry tomatoes, halved and seeded
- 1 bunch of Asparagus 
- 1 lemon, zested and juiced
- EVOO (Extra Virgin Olive Oil)
- Grated parmesan cheese
- Salt and Pepper 

RECIPE

1. Wash the Cod and pat dry
2. Brush the Cod with EVOO on both sides.
3. Brush the lemon juice on both sides of the Cod.
3. Sprinkle Cod with salt and pepper on both sides.
4. Preheat the oven to 375 degrees.
5. Place the Cod on a baking sheet.
6. Trim the asparagus and put them in a bowl with the tomatoes. 
7. Pour a little EVOO on the asparagus and tomatoes. Sprinkle salt and pepper on them and stir. 
8. Spread the asparagus and tomatoes on the baking sheet between the Cod.
9. Sprinkle parmesan all over all the food.
10. Bake for 10 minutes. 
11. Take the pan out of the oven and switch the bake to broil on high. 
12. When the broiler is hot,  put the sheet pan back in the oven for 3 minutes.
