Mediterranean Chicken over Rice
INGREDIENTS
- 3/4 cup of water
- 3 tbsp tomato paste
- 2 tbsp fresh lemon juice
- 1 1/2 tsp salt, Divided
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
- 1/4 ground fennel seed
- 1/4 turmeric
- 1 tsp ground coriander
- 1/4 tsp of pepper
- 3 tbsp Olive Oil, EVOO
- 1 yellow onion, chopped
- 2 chicken breasts
- 1 tbsp parsley, finely chopped
- 1 1/2 cups of white rice
RECIPE
1. Combine the first 10 ingredients (1 tsp of salt) in a bowl. Whisk until smooth and put aside.
2. Wash the chicken and sprinkle salt (remaining 1/2 tsp) and pepper all over.
3. Cut the chicken into small pieces
4. Heat EVOO in a large pan on medium heat.
5. Add onions to the pan and cook for 5 minutes.
6. Add the pieces of chicken to the pan and cook until the pieces are golden brown.
7. Add the mixture from the bowl to the pan. Stir. Bring to boil.
8. Reduce the heat and simmer for 8 minutes. Stir occasionally.
9. Add parsley and serve with white rice.
