Tortellini with Shrimp and Sundried Tomatoes


INGREDIENTS 

- 16 oz package cheese tortellini 
- 4 tbsp EVOO 
- 4 cloves minced garlic
- 8 - 12 oz of raw peeled and devained medium shrimp
- 8 oz sun-dried tomatoes lightly drained from oil
- 4 tbsp white wine

Salt and Pepper

RECIPE

- Cook Tortellini according to package directions. Drain and keep warm. 
- Meanwhile, chop sun-dried tomatoes. 
- In a large deep pan, heat EVOO on medium heat. 
- Add garlic until fragrant about 30 seconds. Stir continuously. 
- Add shrimp until white/red color. Stir occasionally. 
- Add the sun-dried tomatoes until warm.
- Add drained tortellini to the pan. 
- Add wine and stir.
- Season with salt and pepper. 
- Splash a little more EVOO until tortellini glistens. 
- Add shredded parmesan.  (optional)
