Air Fried Chicken Parmesan


INGREDIENTS
- 2 large chicken breasts
- 1 cup Panko crumbs
- 1 egg
- 1 tbsp dry italian seasoning 
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup store bought marinara sauce
- 3/4 cup shredded part skim mozzarella 
- 1/2 cup grated parmesan 

RECIPE
- Spray air fryer with olive oil.
- Preheat air fryer at 400 °. 
- Meanwhile, wash and dry the chicken.
- Place each chicken breast between 2 pieces of plastic wrap.
- Use a mallett to pound chicken breast thin. Be careful not to break the chicken. 
- Cut each chicken breasts in half. 
- Whisk the egg in a small bowl.
- Mix all the dry ingredients in a slightly larger bowl. 
- Dunk a chicken breast into the egg wash and drip it dry. Then, cover it with the dry ingredients in the other bowl.  
- Repeat for each chicken breast.
- Set air fryer temperature to 380°.
- Place chicken into the fryer basket. Do not let them touch.
- Cook for 4 1/2 minutes. Then, use a fork to turn the chicken over. Cook for another 4 1/2 minutes. 
- Leave chicken in the basket while you top each chicken breast with marina sauce and shredded mozzerella cheese.
- Sprinkle grated parmesan cheese on the top. 
- Put the chicken back in the fryer for 3 minutes until the cheese is melted and slightly brown. 

Use any pasta you love as a complimentary side dish. Here, I used garlic and herb pasta from our local Olive Mill. I covered in in EEVO and seasoned it with garlic powder.
