Lemon and Garlic Baked Cod

INGREDIENTS   - 2 Cod fillers (roughly same size and shape) - 1/2 cup olive oil - 6 tbsp Ghee, melted - 1 tsp coriander  - 1 tsp paprika  - 1/4 cup lemon zest from 2 lemons - 6 fresh garlic cloves, thinly sliced - 4 tbsp capers Salt and Pepper to taste RECIPE - Heat oven to 400 degrees - Spray a large oven safe dish with cooking spray. - Lay fish in the dish. - Melt Ghee and add it to the olive oil. - Pour it over the fish. - Sprinkle salt, pepper, coriander and paprika all over fish. - Top fish with capers, garlic, and lemon zest. - Bake fish for 15 to 20 minutes until flakes. - Squeeze lemon on top of fish.  Make it colorful with parsley or cilantro. 

Tortellini with Shrimp and Sundried Tomatoes

INGREDIENTS   - 16 oz package cheese tortellini  - 4 tbsp EVOO  - 4 cloves minced garlic - 8 - 12 oz of raw peeled and devained medium shrimp - 8 oz sun-dried tomatoes lightly drained from oil - 4 tbsp white wine Salt and Pepper RECIPE - Cook Tortellini according to package directions. Drain and keep warm.  - Meanwhile, chop sun-dried tomatoes.  - In a large deep pan, heat EVOO on medium heat.  - Add garlic until fragrant about 30 seconds. Stir continuously.  - Add shrimp until white/red color. Stir occasionally.  - Add the sun-dried tomatoes until warm. - Add drained tortellini to the pan.  - Add wine and stir. - Season with salt and pepper.  - Splash a little more EVOO until tortellini glistens.  - Add shredded parmesan.  (optional) DELIZIOSO!

Air Fried Chicken Parmesan

INGREDIENTS - 2 large chicken breasts - 1 cup Panko crumbs - 1 egg - 1 tbsp dry italian seasoning  - 1 tsp salt - 1/2 tsp pepper - 1 cup store bought marinara sauce - 3/4 cup shredded part skim mozzarella  - 1/2 cup grated parmesan  RECIPE - Spray air fryer with olive oil. - Preheat air fryer at 400 °.  - Meanwhile, wash and dry the chicken. - Place each chicken breast between 2 pieces of plastic wrap. - Use a mallett to pound chicken breast thin. Be careful not to break the chicken.  - Cut each chicken breasts in half.  - Whisk the egg in a small bowl. - Mix all the dry ingredients in a slightly larger bowl.  - Dunk a chicken breast into the egg wash and drip it dry. Then, cover it with the dry ingredients in the other bowl.   - Repeat for each chicken breast. - Set air fryer temperature to 380°. - Place chicken into the fryer basket. Creamy Risotto with Shrimp

INGREDIENTS Salt and Pepper to taste  RISOTTO  - 4 cups chicken stock - ¼ cup sun-dried tomatoes in oil - 5 cloves garlic minced - 1.5 cups arborio rice - 1 cup dry white wine - 1 2/3 tbsp of butter infused EVOO  - ⅔ cup grated parmesan cheese  - 4 oz fresh spinach SHRIMP - 2 tablespoons olive oil - 1 lb large raw shrimp peeled and deveined 16 or 20 count - 5 cloves garlic minced - 3 tablespoons freshly squeezed lemon juice While you cook the risotto, you can also cook the shrimp.  RECIPE RISOTTO  1. Heat chicken stock in a saucepan until hot and keep a lid on it to keep it hot. 2. Sautee minced garlic with sun-dried tomatoes using the oil from the sundried tomatoes for about 1 or 2 minutes in a cast-iron skillet. 3. White Fish Piccata with Smashed Potatoes and Green Beans

Ingredients   - Extra Virgin Olive Oil Fish  - 4 pieces of firm white fish 6 oz each - 6 tbsp wheat flour - 2 tsp Salt - Black pepper  Potatoes  - 12 baby new potatoes (small) - Sprinkles of salt String Beans - 12 oz fresh green beans - 2/3 cup white wine - 4 tbsp fresh lemon juice - 2 tbsp ghee or butter infused olive oil - 4 tbsp capers - 1 cup water - salt and pepper to taste - parsley for garnish Recipe 1 . Cook the potatoes in the microwave for 3 minutes, turn potatoes, then cook for another 3 minutes. If you can get a fork all the way through, they are ready. 2 .  While potatoes cook, combine flour, salt and pepper on a plate and dredge each side of the fish in the flour mixture. Shake off excess flour. 3 . Use a meat mallet or a chef knife and smash each potato so they are flattened to 0.5" thick with a flat surface. Sprinkle with a pinch of salt. 4 .
